Do I subtract every doorway?

Subtract only widths where baseboard or molding will not run. Measure each opening rather than relying on a standard door size.

Why are transitions reported separately?

Transitions are typically different products and stock lengths, so combining them with baseboard would make ordering less useful.

How do stock lengths affect the order?

Linear totals do not guarantee efficient cuts. Lay out required segments against available stick lengths and allow for miters and defects.
